Organic Arugula

Arugula refers to a set of bitter, peppery or mustardy leafy green. It is a popular salad green in France and Italia and it is often used mixed with milder greens to produce a nice balanced salad. Arugula is also referred as rocket, garden rocket, Mediterranean rocket, salad rocket, Italian cress, roquette, and rucola.

Commercially grown arugula are not normally sprayed with pesticides becuase it is not a plant that attract insects. If you find few round holes the size of pinhead in the leaves of arugula, it indicates that the plants are organic and they were not sprayed.

Cooking with Arugula:

Young arugula has mild peppery flavor. It adds a fresh, peppery quality to sandwiches, potato salad and mixed green salad. Mature arugula leaves are larger, more peppery and tougher in texture. They are best cooked. Cooked arugula leaves hava a pleasant bitterness that work well against savory and sweet foods such as beans and onions.
