Cherries are classified as sweet and sour cherries. There are over a thousand of varieties of cherries sold worldwide. Sweet cherries, which consist up to 20% of sugar, are often eaten fresh. Sour cherries contain an abundance of acid. They are often used in pies.

Conventional sweet cherries are one of the most heavily sprayed crops. So it is a good idea to find an organic source when buying sweet cherries. Organic farmers use plenty of methods that do not wreak havoc on the orchard ecosystem. Sour cherries are virtually diseases resistant. So they are rarely sprayed with chemical.
